This recipe is, in my opinion, a great example for how you can create something completely new with well-known and often-used ingredients. When you look at the ingredient list, it doesn’t contain anything special at first glance. But I bet you’ve never eaten anything like this tasty and refreshing almond bulgur before!

Almond Bulgur

  • 30 g almonds
  • 150 g bulgur
  • 30 g raisins
  • 2 tbsp olive oil
  • 1/2 tsp Ras el -Hanout or Harissa
  • salt
  • a handful of chopped coriander


  1. Roast the almonds in a heated pan, let them cool off and chop them.

  2. Cook the bulgur with some salt in 300ml of hot water. 2 minutes before it's done cooking, add raisins.

  3. Add almonds and coriander.

Serve your almond bulgur with these amazing stuffed aubergines.
